Easy Vegan Mushroom Pies
"Tender, juicy, meaty portobello mushroom, stuffed with sweet caramelized onions, a sprinkling of thyme, all topped with buttery, crisp pastry. This is seriously the easiest Vegan Mushroom Pie you will find & it’s soooo good!!! They are so easy to make, come in individual but generous portions and can easily be made ahead of time. The pies will sit quite happily in the fridge for a couple of days before baking. The base is the meaty portobello mushroom which is stuffed full of caramelized onions and thyme and the rich, buttery, crispy pastry nestles on top. It’s a dream to eat!"

You definitely do not need to be vegan to enjoy these amazing little pies full of mushrooms and carmelized onions! For our non-vegan diners, using a store-bought pie crust or even making a quick little homemade crust out of refrigerated biscuits is a great idea! The flavors complement each other really well in this dish- great dinner or appetizer recipe!
