Mock Tuna Salad Sandwich
Ingredients
- black eyed peas, cooked
- finely chopped celery
- finely chopped onion (bermudas are best)
- red/green pepper
- mayo (or 2/3 mayo and 1/3 yogurt or mayo substitute)
- dash dry mustard
- cayenne
- salt
- pepper
- dill
Instructions
Mix all together, chill. Serves best in pita or on substantial whole grain bread, with a leaf or two of lettuce and cilantro or parsley garnish. Keeps up to a week in the fridge.
