    Mock Tuna Salad Sandwich

    Ingredients

    • black eyed peas, cooked
    • finely chopped celery
    • finely chopped onion (bermudas are best)
    • red/green pepper
    • mayo (or 2/3 mayo and 1/3 yogurt or mayo substitute)
    • dash dry mustard
    • cayenne
    • salt
    • pepper
    • dill

    Instructions

    Mix all together, chill. Serves best in pita or on substantial whole grain bread, with a leaf or two of lettuce and cilantro or parsley garnish. Keeps up to a week in the fridge.
