Cheesy Chile Squares
These Cheesy Chile Squares pack a punch. Infused with chile and cayenne pepper these delightful squares will be a hit at any party. If you love simple appetizer recipes you will love this one.
Ingredients
- 4 tablespoons butter
- 5 eggs
- 1/4 cup flour
- 1/2 teaspoon baking powder
- 1/8 teaspoon salt
- dash cayenne pepper, to taste
- 2 cups Monterey Jack or Cheddar cheese, shredded
- 1 cup small curd cottage cheese
- 1 can (4-ounces) diced green chilies
Instructions
- Preheat oven to 400 degrees F.
- Melt butter in 9" square baking pan in oven.
- In large bowl, whisk eggs until well blended. Stir in flour, baking powder, salt and cayenne.
- Tip baking pan to coat bottom and sides; add melted butter to egg mixture. Add Jack and cottage cheeses, and chilies, and blend well.
- Pour mixture into buttered pan and bake 15 minutes. Reduce oven temperature to 350 and bake 30-35 minutes longer, until top is lightly browned and a knife in center is clean.
- Let cool on a rack at least 10 minutes. Cut into 1 1/2 inch squares. Can be made in advance, cover and refrigerate up to 2 days. Can freeze. Serve warm or at room temperature.
