So delicious! I do not like syrup so we used a little extra brown sugar. They are not at all difficult to make and the result is a very appetizing side dish to go with just about anything. We had ours to go with a weekend barbecue and they disappeared pretty quickly so it seems everyone enjoyed it as much as I did.

We always seem to think that potato skins should be savory and topped with bacon bits, cheese, chives, sour cream, etc. But this sweet take on that popular appetizer is refreshing and healthy! I love the use of so many types of nuts. Be careful of loading the potatoes up with too much sugar or butter. Instead, focus on the natural spices like pumpkin pie spice, cinnamon, and nutmeg. They provide all the flavor you need! Thanks for this great recipe!
