Roasted Garlic Dip
This creamy garlic dip is the ultimate party appetizer.

This roasted garlic dip is absolute heaven. There's something about the combination of zesty roasted garlic, bright lemon, and fresh herbs in a creamy dip recipe that just can't be beat. This recipe is the perfect party food--you and your guests won't want to step away from the snack table!
We served this roasted garlic dip with potato chips, but it is great almost any way you dish it up. Try it with crusty bread, fresh veggies, or pretzel sticks. They are all equally delicious... you might want to start by making a second batch!

Ingredients
- 3 heads of garlic, cut in half
- 3 tablespoons olive oil
- 1 1/2 cup sour cream
- 1/2 cup Miracle Whip
- 1/2 teaspoon dried thyme
- 3 tablespoons parsley, finely chopped
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 3 tablespoons lemon juice
- 1/4 cup bacon bits
- lemon zest to garnish
Roasted Garlic Dip Recipe
Instructions

Preheat the oven to 400 degrees.

Place the garlic heads on 3 pieces of aluminum foil and drizzle each with one tablespoon olive oil.

Wrap the aluminum foils around each garlic head and roast in the oven for one hour until the cloves are soft.

Allow to cool for 20-30 minutes.

Once cool, squeeze and mash the cloves into a large bowl.

Add sour cream, Miracle Whip, thyme, chopped parsley, salt, ground black pepper and lemon juice. Mix well.

Chill in the fridge for at least an hour before serving. When ready to serve, garnish with lemon zest and bacon bits. Serve with chips.

I just love the delicious sweetness of roasted garlic - completely different from when it's raw! This dip was the first to disappear at our weekend barbecue so I will definitely be serving it often from now on. It's easy to make too which makes it a double plus as far as I am concerned.

Can I tell you how popular this Roasted Garlic Dip is on game day and movie night? I have to make a double batch!! My family and friends absolutely love it. The flavor of roasted garlic is phenomenal, and combined with the fresh herbs, lemon zest, and bacon bits...YOWZA!! I put a big bowl of this in the middle of a platter of chips, toasted bread, pretzels, and veggie sticks (like the blogger recommended) and watched it be devoured.

Omigosh, forget about being popular...I want it all for myself. LOL, It's kinda awesome how garlic takes on a whole different flavor when it's roasted, somewhat like onion when it's caramelized. This dip sounds yummy but I think I'd rather use Hellmann's instead of Miracle Whip (it's just a preference thing) and do you think Greek yogurt would work as a substitute for the sour cream? I mean I love sour cream but yogurt is a much healthier option. Bacon is a surprising ingredient in this recipe...but it's got me a little curious.

I was a little bit intimidated at first by the amount of garlic in this recipe, but it turned out really good. When it is roasted like this it loses its strong pungent flavor and becomes sweet and savory. I used light mayonnaise in place of the miracle whip since I don't care for it. I had a little bit leftover and I spread it on a turkey sandwich for lunch the next day and it was awesome!
