Finnish Meatballs
Ingredients
- 1 lb. ground beef or chuck
- 1 med. onion
- 1/2 cup oatmeal
- 1/2 cup heavy cream or half and half
- 1 teaspoon salt
- 1/4 teaspoon white pepper
- 1/2 teaspoon dried dill (optional)
- 1 tablespoon butter (the real thing!)
Instructions
Mix oatmeal, cream, salt and white pepper and let sit a few minutes to soften the oats. Cut onion in half and chop half the onion in very small pieces. Slice the rest and put onion in small saucepan (big enough to hold meatballs) and barely cover with water. Heat the onion in the saucepan while making meatballs. Mix together ground beef, chopped onion and cream mixture. Melt butter in skillet. Roll beef mixture into meatballs and brown in butter (med. high heat) for approx. 8 min. The key to good meatballs is to have a very browned outside. Almost burned but not quite. Drain on paper towels and fry additional meatballs if needed. Put all the meatballs in saucepan with onions and add water to your frying pan and scrape blackened bits. Pour this water over meatballs and if they aren't completely covered, add additional water until you just cover them. Salt the water. The water should almost taste a bit too salty. Be careful not to overdue it with salt. Simmer for 30 minutes. Serve over boiled potatoes.
