How did you ever come up with a meat stuffing for a potato? I use all kinds of ingredients to stuff and twice bake my potatoes, but I have never thought of turning them into a taco boat. I can't wait to see what the family thinks of this on taco Tuesday.

Our family LOVES sweet potatoes with a filling so this recipe was an absolute must do for me. I was not sure about Non Fat Refried Beans (not a thing in South Africa) but, nonetheless, I made do and produced what seemed like a reasonable facsimile of this overall recipe. The family enjoyed it which is always a good sign and this morning the youngest asked if there were any leftovers so it seems we will be having these again!

This is a great idea! I'm not much of a fan of sweet potatoes, though my wife loves them and I can easily see making this up with russets for me and sweet potatoes for her. For all the times I've made baked potatoes, I've never thought about using taco meat as a filling. I'm usually a bacon and cheese person when it comes to stuffings. This is definitely an idea to keep in mind for cooking this summer.

Stuffed potatoes with taco filling? Yum! This stuffed potatoes looks great, and easy to cook. Yay! One more choice for dinner. Definitely works well with potatoes, Im sure about it. But Ill try to cook this with sweet potatoes, just for a variation. Hope the kids like it. Thanks for the recipe.
