Don't be afraid of yeast bread! The rising and punching down process is not difficult. Just let the bread rise while you go about your other work. You can also make 2 batches and put the dough balls in a covered bowl in the refrigerator and make them the next day or so. True, this is plain white flour bread, but once in a while it's a comfort food you just gotta have! Make sure the rest of the meal has some fiber and nutrition in it and you will balance out the meal.
