    Spinach Cheese Stuffed Bread

"This khachapuri-inspired spinach and cheese stuffed bread made from scratch looks impressive and tastes amazing. The soft and chewy spinach, mozzarella and feta stuffed bread will please any crowd. Khachapuri is a very popular Georgian (the country, not the peach state) dish that is basically baked bread and cheese. It usually comes in its most popular form, which is in a boat shape with an egg cracked on top. Here in Vilnius, I had the pleasure of going to a Georgian restaurant and eating a type of khachapuri called megruli khachapuri. Since then, I couldn’t stop thinking about it and decided I’d try my hand at it."

The use of spinach and feta inside a dough really makes me think of spanakopita. I love spanakopita so this is a recipe I definitely want to try. My intake of spinach has to be limited due to the blood thinner I have to take, but this is really, really tempting. I know I should be able to sneak at least a piece of this, especially since it looks rather easy to make.

This stuffed bread recipe looks so pretty and shiny due to the egg yolk wash, it will surely impress your guests. The cheese and spinach mixture actually seems very Greek to me. It would be great with a Greek salad as a vegetarian main course, or even as an appetizer or party snack for your next football party!

I am so happy to find a bread recipe that isn't super complex with a long, frightening ingredient list!!! This bread seems pretty simple for the home chef and the filling sounds amazing! Not a spinach person? No worries- feel free to try broccoli, pepperoni, artichoke, zucchini, or any other veggie or filling that you would like! Also, this recipe uses mozzarella and feta but I think a goat cheese inside would be delicious, too!
