For most people, beginning a keto diet involves a transition away from processed foods and eating out a lot, to doing more cooking at home. While eating keto can be very beneficial, it does take some thought and prep work in the kitchen. That’s why I love this keto sausage egg bake recipe. Sure, you could get up every morning and stare at the fridge, wondering what to eat and willing yourself to just pick something. But I know from experience that often results in the ill-fated “coffee for breakfast” scenario."

Ingredients
- Olive oil to cook with
- 1 onion, chopped
- 1 lb sausages, casings removed
- 12 oz spinach
- 1 bell pepper, chopped
- 4 Tablespoons fresh basil, chopped
- Salt and pepper to taste
- 6 eggs
- 1 bag (20 g) of pork rinds (optional), lightly crushed
- 2 Tablespoons sliced almonds (optional)

Preheat oven to 400 F.

Place 2 tablespoons of olive oil into a frying pan. Add in the onions, bell pepper, and sausage and cook until onions are translucent and the sausage meat is cooked.

Add in the spinach and chopped basil. Cook for 1-2 minutes more.

Pour the sausage mixture into a 9 by 9 baking tray.

Make 6 indentations in the mixture and crack an egg into each indentation.

Bake the mixture (uncovered) until the egg whites are solid but the yolk is still runny. This takes around 15 minutes.
