Sausage Stuffed Breakfast Peppers

I hope you enjoy these Sausage Stuffed Breakfast Peppers as much as I do. They're gluten-free, dairy free, primal and paleo friendly. And, marvelous. Simply, marvelous. NOTE: If you'd like to freeze these, set them upright on a cookie sheet and let them freeze through. Then toss in a large freezer bag. Grab out as many or few as you want when you're ready to eat!"

I think this sounds like a fun meal, but too much work for breakfast at our house. I will make it for dinner one night. It's so interesting to put the egg on top. I have a lot of peppers growing in my garden, so I have to have recipes ready to go. This is a great version of stuffed peppers!

A lovely and novel idea for a late breakfast or brunch (which is what usually happens in our house over weekends. lol!). I added a little crumbled crispy bacon to ours but I think it would have been just as tasty without it. The children loved it to and we will be having this again in the future.

I love stuffed peppers. I really do. These are not quick to make for breakfast. I would suggest assembling these the night before and baking them in the morning. I love all the parts of this. I am not big on adding the egg to it. I'd eat the egg on the side.
