    Congo Bars

    Ingredients

    • 4 cups flour
    • 4 teaspoons baking powder
    • 1/2 teaspoon salt
    • 1 1/2 cup butter, melted and cooled
    • 3 1/2 cups firmly packed light brown sugar
    • 6 eggs, lightly beaten
    • 2 packages (12 oz each) chocolate chips

    Instructions

    Preheat oven to 350. Grease jelly roll pan(10 x 15 x 1") Sift together flour, baking powder, and salt. Combine butter and sugar and beat until creamy. Beat in egs one at a time. On low speed, add in flour mixture until it is barely incorporated. Stir in chocolate chips by hand and spread batter evenly into prepared pan. Bake for 40 minutes unitl golden brown and firm to touch in the center. Cool completely and cut into bars. Freezes well.
