Grown-Up Grilled Cheese Sandwich
"Carly, my oldest daughter, inherited my love for grilled cheese, but one day decided to kick it up. She added some honey, spicy mustard, Cajun season and spinach and called it her Grown-Up Grilled Cheese. Carly has been making this sandwich ever since she was a teenager."
Notes
This is a great way to get your healthy spinach in your diet with this ooey gooey grilled cheese.
SKILLET METHOD
- Add it to a medium hot skillet. If the skillet is to hot the sandwich will burn. I like to place a lid on top for a couple of minutes. Make sure the sandwich is not burning.
- Butter the top of the sandwich and flip it over.
- Cook until the bottom piece of bread is golden brown.
TO BAKE A LOT OF THESE SANDWICHES IN OVEN
- Bake them in the oven at 350 degrees for 15 minutes or until it is golden brown.
PANINI GRILL
- You can also place this sandwich on a panini grill and cook until golden brown.

Ingredients
- 2 slices Multi Grain Bread
- 1 tablespoon Honey
- 1 tablespoon Spicy Brown Mustard
- 3 slices Cheese, depending on the size of your bread
- 3 slices Ham, depending on the size of your bread
- 1/2 cup Fresh baby spinach
- 1/2 teaspoon Cajun Seasoning
Instructions

In a small bowl, mix the honey and spicy mustard.

Add the honey and spicy mustard to one side of two pieces of bread.

Add a slice of cheese on top of the honey and spicy mustard on both pieces of bread.

Layered the ham on top of one of the pieces of cheese.

Add the spinach on top of the ham. Sprinkle the Cajun seasoning on top of the spinach.

Place the other piece of bread with the honey, spicy mustard and cheese on top of the spinach.

Butter the top outside piece of bread.

My hubby is the king of creative grilled cheese sandwiches! He would really love this version. I like the honey mixed with the mustard. It gives a sweet and tangy twist. I think that a good smoked gouda would taste amaing on this sandwhich. Rosemary ham would also be abolutely yummy. I was lucky enough to have been given a panini press, so I can get a nice crispy crust on the outside of my sandwich. If you are making it in a pan, you can press down while it's cooking to build up a crust. So yummy and fun to experment with grilled cheese!

I honestly wouldn't have thought of adding spinach to a grilled cheese sandwich, but I'd like to give it a try. The combo of honey, brown mustard, and cajun seasoning would definitely give it an unusual taste. I've used brown spicy mustard on grilled cheese before, but honey and cajun seasoning are new to me. I'm not sure what cheese (or cheeses) would be best for this. I do want to try a sharp American and a cheddar, but I think a Monterey Jack or pepper jack might also work very well.

Sunday nights are no cook nights in my house and we always make grilled cheese. This 'grown up' grilled cheese seems a great alternative to the boring 'cheese on bread' we are used to. I like the combination of mustard, honey and cajun spices. I think those flavors go well together. I also love spinach but never thought to add that to a grilled cheese sandwich so this Sunday I am definitely going to add some. Yummm, I'm looking forward to trying this on the weekend.

This is really an interesting sandwich. I can't wait to try this combination of ingredients. We make grilled ham and cheese sandwiches, but we never add spinach or honey or Cajun seasoning. I can't wait to try this with some soup and salad. I'll try it with different kinds of cheeses to see which we like best.
