    Banana Coconut Cake

    Ingredients

    • 1 1/2 cup sugar
    • 1/2 cup shortening
    • 2 cups flour
    • 3/4 teaspoon baking soda
    • 1/2 teaspoon salt
    • 1/3 cup buttermilk
    • 1 cup mashed bananas
    • 1 teaspoon lemon juice
    • 3 Tbsp. butter
    • 3/4 cup brown sugar
    • 1 cup coconut
    • 3 Tbsp. milk
    • 1 egg
    • nuts (if desired)

    Instructions

    Cream sugar and shortening. Add dry ingredients alternately with creamed mixture. Add buttermilk, bananas and lemon juice. Bake at 350 degrees for 30 minutes. Topping: Mix and put on warm cake under broiler for a few minutes. Watch closely!
