"June in January" Cake
Add a little summertime cheer to your January by making "June in January" Cake. This easy strawberry cake recipe will remind you of summer even in the dead of winter. Use frozen strawberries and a box of white cake mix to make this vintage cake. Not only is the cake delicious, but it looks pretty, too. There are two layers each of cake, frosting, and strawberries that make this a beautiful red and white cake.
Ingredients
- 1 box white cake mix, plus ingredients on package
- White frosting
- Frozen sliced strawberries, thawed
Instructions

Bake cake in a 9 x 13 inch baking pan according to box directions. Cool completely.

Thaw sliced strawberries.

Cut cake into squares. Just before serving, slice a square of cake in half horizontally. Spread white frosting on the bottom layer of cake and top with sliced strawberries. Place the top layer back on the bottom layer, frost and top with more strawberries.

what a beautiful cake! I love angel food cake with strawberries, so I am sure this will be a wonderful dessert! I can get a cake mix for one dollar, and strawberries are on sale, so guess what I am making this weekend?
