Madeira Cake, from Jane Grigson's English Food
Ingredients
- 6 ounces butter
- 6 ounces caster sugar
- 9 ounces flour
- 1/2 teaspoon baking powder
- 4 large eggs
- grated rind of half a large lemon
- 2 strips of lemon or citron peel
Instructions
Cream the butter and sugar together until the mixture is light and fluffy. Sift the flour and baking powder together. Beat the eggs into the butter and sugar, one at a time, adding a little flour if the mixture seems to be separating. Stir in the rest of the flour and the grated lemon rind. Turn the mixture into an 8" cake tin which has been lined with Bakewell paper or greased and floured. Bake for 1 1/2-2 hours at mark 4, 350F. After one hour place the two pieces of peel on top, and complete the baking. Serve with Madeira.
