These are so cute and definitely exude springtime. The use of the instant lemon pudding adds a nice soft, pillowy texture to the cakes. However, they are still kept light and fluffy! I recommend adding some fresh blueberries into the cakes for a pop of color, texture, and flavor! Also, read the recipe because you can also make these into muffins or mini muffins!
