    Moist Lemon Cake

    Ingredients

    • 110g / 4 oz butter
    • 170g / 6 oz caster sugar
    • 170g / 6 oz self-raising flour
    • 1 level teaspoon baking powder
    • 2 large eggs
    • Grated rind of one large lemon
    • 60 milliliters / 2-1/2 oz milk

    Instructions

    Preheat oven to 180:C / 350:F / gas mark 4. Put all the ingredients in a food processor and whiz until really smooth. (the mixture is quite runny) Pour into prepared tin and bake for 40-50 minutes. Meanwhile, dissolve 3 teaspoons of sugar in the juice of the lemon. Test that the cake is done by pushing a metal skewer into the center. If it comes out clean, you are OK Place the cake,still in its tin, on a cooking rack and prick all over with a skewer, then spoon all over with the sugar and lemon liquid. Leave in the pan until quite cold.
