Pouding au Chomeur Poor Man's Cake
Poor Man's Cake is sometimes referred to as Depression Cake. It's an old-fashioned dessert that was particularly popular during the 1930s and is just as delicious and budget-friendly today.
Ingredients
- 2 cups flour
- 3/4 cup sugar
- 4 teaspoons baking powder
- 4 tablespoons melted shortening
- 1/2 teaspoon salt
- 2 cups brown sugar
- 2 cups water
- 1 tablespoon flour
- 1/2 teaspoon maple extract
Instructions
- Preheat oven to 350F degrees.
- Mix together flour, sugar, baking powder, melted shortening and salt In a saucepan.
- In a separate saucepan, combine the brown sugar, water, 1 tablespoon of flour and maple extract. Bring to a boil, cook slowly 2 minutes.
- Pour the brown sugar mixture into a glass 9x13-inch pan.
- Add the flour mixture by the spoonful into the syrup and bake until nice and golden.
- Serve hot by big spoonfuls and dribble a little sauce over it.
