Ugly as Sin Coconut Cake
Looks aren't everything. Ugly as Sin Coconut Cake may not be the prettiest cake you'll ever eat, but it may be one of the tastiest. The four cake layers are separated by three layers of coconut pastry cream. The cake is frosted with a Swiss meringue. The cake, pastry cream, and meringue are all made from scratch, so this won't be the easiest cake you'll ever make. But, like all good recipes, it's worth it. Make this homemade coconut cake for your next special occasion. It will be a hit.

Honestly, this cake really isn't ugly as sin. Even though it's missing the nice meringue curls, there's something oddly appealing about the flat, torched look. The cake itself looks wonderful, and since I like coconut cake a lot anyway, I'm sure this is one I'll try. The only thing that trips me up when making cakes like this is cutting the cakes in half for making the layers. That's the part of the cake for me that can be ugly as sin.
