I am deep into my zucchini recipes right now because my garden is bursting with zucchini. I didn't have a recipe with ground beef. This one is easy and delicious. Normally my son would not eat zucchini, but when I put it in a casserole, he's fine with it.

This is a nice, easy recipe. I like that zucchini is included in the casserole so that I don't have to cook vegetables for a side dish. Unlike many casseroles, pasta is not the main ingredient. Zucchini is the star here. When I make this, I will most likely forgo the crushed crackers, and use low-fat cheddar cheese for the topping.
