Oh very nice, thank you so much for this lovely recipe! We added some sliced chorizo sausage. a little fresh chopped chili and a few extra vegetables that were on hand. It was so delicious that we ate every single last grain of rice. It is always really quite around the table when the meal is particularly good and tonight the children were absolutely silent, lol!

This sounds like an easy and delicious rice and vegetable casserole. I would like to try this recipe using white rice, and then try it again using brown rice. For the vegetables, I would use carrots, onions, bell peppers, zucchini, mushrooms, and broccoli. To lighten the dish, I would use skim milk, lite cream cheese, and reduced fat cheddar cheese.
