I'm not a fan of the pina colada flavor, but these cookie cups are absolutely adorable! I would definitely make this style of dessert with different ingredients.

These are adorable and so colorful! I think they'd be perfect for a summer book club meeting. I thought at first that they'd be made in a mini muffin pan but it looks like a regular one but you could use a smaller one if you wanted a more petite dessert. I love the little piece of pineapple and cherry on the top. These are gorgeous. I also like that the coconut extract is in the crust part of the recipe. I bet that gives a beautiful flavor.

How cute are these little pineapple cheesecake cups?! Even though making the cookie cups looks very simple, I would still probably use store-bought refrigerated sugar cookie dough to make the cups- just as a timesaver! Besides that one change, this recipe is quick, easy, and looks so pristine!
