    Sometimes a chicken casserole recipe just hits the spot. Perfect for a weeknight dinner, this hearty casserole is made with rice and chicken for a robust, spicy, meal that will feed the family. Make this wonderfully cheesy dish tonight!

    Ingredients

    • 6 ounces Fresh Take chili lime & panko recipe cheese breadcrumb mix, mixed together
    • 2 cups chicken, cooked and shredded
    • 2 cups long-grain white rice
    • 1 can (10.75-ounces) fat-free reduced-sodium chicken broth
    • 1 cup light sour cream
    • 7 ounces jar of roasted red peppers, drained and chopped

    Instructions

    1. Preheat oven to 350 degrees F.
       
    2. Reserve 1 cup of cheese mixture.
       
    3. Combine remaining cheese mixture with remaining ingredients; spoon into 1-1/2-qt. casserole sprayed with cooking spray. Top with reserved cheese mixture.
       
    4. Bake 20 to 25 min. or until heated through.

    This sounds so good, I love one pot recipes! I don't think in Ireland you can get that breadcrumb mix, it is just plain bread crumbs- could you just add chilli flakes or power and a juice and rind of a lime to make these breadcrumbs yourself? Could you use brown rice to make it a more healthy option?
