Ingredients
- 2 carrots, sliced
- 1 tablespoon (to 2) olive oil
- 2 cups (to 3) chicken, cooked and diced
- 1 medium onion, chopped
- 2 stalks of celery, chopped
- 1/4 cup green pepper, chopped
- 1 cup mayonnaise
- 1 can cream of mushroom soup
- 1/4 cup melted butter
- 1 1/2 cup herb-seasoned stuffing
- 1/2 cup water
Instructions
- Preheat oven to 350 degrees F.
- Sauté carrots, onion, celery, and green pepper in olive oil until tender.
- Mix together chicken, sautéed veggies, mayonnaise, and mushroom soup. Place in baking dish.
- Mix together butter and water with stuffing. Sprinkle on top of chicken mixture. Bake for 30 minutes.
