NotesServing a Larger Crowd? You can double the ingredients and bake the dinner in a 9 x 13-inch baking pan. The cooking instructions remain the same.
Want to Prep Ahead? I like to chop all of the ingredients in advance and keep them in the dish (covered) in the refrigerator. When you're ready to bake, just stir in the rice and the water, cover, and pop it in the oven.

I do that too! In the morning when I am in the kitchen preparing a quick breakfast and sack lunch for my son, I always chop a few veggies up for our dinner meal. I put them in baggies or containers and throw them in the fridge before going out the door. When the work and school day is done, the last thing I want to do is spend a lot of time cooking and cleaning!
