Ingredients
- 5 pounds whole chicken
- 6 cups Chicken broth
- 1 large diced onion
- 3 large diced carrots
- 3 medium Celery chopped
- 1 clove Garlic minced
- 2 teaspoons Italian Parsley chopped
- 1 Bay leaf
- 1 large Parsnip chopped
- 2 Thyme sprigs fresh

Separate the chicken breasts and the breastbone. Also, cut the legs of the chicken. Take a large bowl or you can also use a Dutch oven. Cover the chicken breast, and legs with stock. Also add thyme, garlic and bay leaf to the bowl

Heat the stock at medium flame till the temperature is between 150 degrees to 160 degrees F. Use a thermometer to check the temperature and adjust the flame accordingly to heat the stock. Make sure you control the temperature between 150 and 170 degrees F

Cook the stock till the breasts reach 150 degrees, which might take an hours’ time. Remove the breasts and keep it aside. Let the soup simmer as you continue cooking it for another 1 hour. Remove bay leaf and thyme sprigs from it. Remove all the chicken pieces from the soup and keep them aside. Separate the meat from the bone and shred them.

Add the shredded chicken back to the cooking pot (Do not add the breast meat now) and allow it to boil. Add the ingredients like carrot, parsnip, onion, celery and Italian parsley and cook for about 10 minutes.

Use Kosher salt and black pepper for seasoning the soup. Add the Dill or other herbs that are freshly minced and stir well. Dice the chicken breast and add it to the soup and serve hot.
