Brittle Peanut Cookies

Ingredients
- 1 1/2 cup raw peanuts
- 1/2 cup water (scant)
- 1/2 cup brown sugar
- 2 cups rolled oats
- 1/2 cup oil
- 1 teaspoon vanilla
- 1/2 teaspoon salt
Instructions
- Blend 1 cup peanuts in water until fine (or grind with fine blade) reserving 1/2 c. to chop in medium pieces.
- Combine all ingredients. Drop on oiled sheet, press dough together and flatten with side of spoon.
- Bake at 325 degrees F, very lightly browned.
- Reduce heat -- let dry. Loosen with spatula and let cool on cookie sheet.
