Soft Pineapple Cookies
Pineapple and vanilla are two sweet ingredients I would love to put together. This is a great cookie recipe that your guests will love. It makes three to four dozen cookies.

Ingredients
- 2 cups sugar
- 1 cup shortening
- 4 eggs
- 1 teaspoon vanilla extract or coconut extract
- 1 cup crushed pineapple, well drained
- 4 1/2 cups flour
- 2 teaspoons baking soda
- 1/2 teaspoon salt
- 1/2 cup finely chopped nuts or shredded coconut
Instructions
- Heat oven to 350F degrees.
- Cream sugar and shortening.
- Add eggs one at a time to blend.
- Add drained pineapple and nuts.
- Combine dry ingredients and add to creamed mixture.
- Blend into a stiff mixture.
- Drop by tablespoonfuls onto a lightly gresaed cookie sheet a few inches apart.
- Bake 350F about 15 minutes or until browned at edges and appears set.
- Remove to racks to cool.
