Apple Pork Curry

Ingredients
- 2 pounds lean pork, cut into, 1/2
- 1 apple, peeled and chopped
- 1 small onion, chopped
- 1 clove garlic, crushed
- 1 teaspoon concentrated chicken broth
- 1 tablespoon curry powder
- 1/8 teaspoon cinnamon
- 2 teaspoons ground ginger
- 1/2 teaspoon salt
- 1/2 cup orange juice
Instructions
1. In slowcooker, combine the above ingredients. Cover and cook on low 5 or 6 hours or until pork is tender. (I have had to let this cook as long as 11 hours before - still turns out great...) Turn pot on high.
2. In a measuring cup, combine 2 Tbsp cornstarch and 2 Tbsp cold water. Stir into pork mixture. Cover and cook until thick. Serve over rice and pass around peanuts, coconut, raisins, and chutney as condiments.
