Ingredients
- 2 pounds bag frozen hash browns
- 16 ounces (1 pound) sour cream
- 10 ounces shredded cheddar
- 4 ounces Monterey Jack cheese
- 1 stick or 1/2 cup butter or margarine
- 1/2 cup chopped onions
- 1 can cream of chicken soup
Instructions
- Place hashbrowns in slow cooker, stir in all remaining ingredients (except for part of cheddar cheese), and mix together.
- Cook in slow cooker on high for about 3-4 hours. Add cheese to top when serving.

Hash brown casseroles are something I've always eaten at someone else's house and thought this has to take forever to make...but after reading the recipe I can see it's really not so hard at all. If you wanted to, you can even make individual size casseroles by baking them in mini loaf pans then customize them with for the picky eaters in your family. I'm thinking jalapeno peppers or mushrooms in mine. Yum!

Why would you stir the ingredients after adding them to the crockpot? Just stir them before you add it and eliminate a huge mess that will make for a more difficult cleanup

It never occurred to me to make hash browns in the slow cooker, but it sure will from now on! This delicious dish doesn't even need to be relegated to a side dish - I'd eat it as a main course, with a nice salad on the side. Easy, cheesy, and a definite pleaser!

Me neither! But I think I will keep frozen hash browns on hand now because these are so easy and delicious. Definitely comfort food! I always keep cream of something soups in my pantry and there's usually a half container of sour cream, so I'm ready for an emergency casserole situation. lol

One scoop of these potatoes was NOT enough! The two kinds of cheese, plus sour cream and soup make them super creamy, cheesy and delicious.

I LOVE this recipe. We made this in the office, and it was done right around lunchtime, which was perfect. The potatoes weren't too soggy, and the cheese-potato combination really hit the spot.

I made this yesterday as a side dish for a meat loaf.... It was great..... definite do over.... I did substitute Cream of Mushroom Soup as that is what I had....

I fixed this yesterday as a side for a meatloaf.... I thought it was crazy good....I did substitute cream of mushroom soup ... definite do over...easy and good.... now I have to get another crockpot because I had to do the meatloaf in the oven.....

Perfect for traveling on Thanksgiving. I put it in the crockpot for a couple of hours, packed it to stay warm on the 2hr drive to the Family, then plugged it back in and it was ready in an hour. I used the suggestions of cream of celery soup and fresh chives. Really good. Oh, and of course some real bacon bits with the cheese on top. Yum!!

Great recipe for a family meal or to take to a pot luck! Even my picky eater had two helpings. I would sprinkle some chopped green onions and bacon bits on the top.

First I would use red potatoes, cut thinly into strips or cubed. I'd saute the onions in the butter. And then since I'm changing it into a gluten free recipe, I'd swap that can of soup with 1/2-1 cup of broth (whatever flavor I had handy) and thicken it with some arrowroot or tapioca flour. For the final cheese on top I would mix the cheddar with some mozzerella, cook it in the oven, then add the cheese during the last 20 minutes so it gets bubbly and even a little browned and crispy!

I would brown the onion in the butter...only 1/4 cup butter or use fresh green onions or chives. I would also add 1/3 cup - 1/2 cup of bacon bits (not the artificial ones) but the ones in the jar or large bag from like BJ's or Costco. I would alos add 1/4 cup milk to the mix as well and when topping it with the final cheese in step #2, I would add 1/2 cup buttered bread crumbs. To make them crisp like out of the oven, mix 1/2 cup bread crumbs and 2 Tbsp melted Butter, mix well. Pour ona baking sheet and bake for 10 -15 minutes at 350, mixing once or twice to "crisp" them up. Then sprinkle on top of the cheese, just before serving. This is a great potluck dish and feeds a crowd...a definate keeper!

I would change the onions to small green onions or fresh chives and I would add 1/3- 1/2cup crumbled bacon or bacon bits(not the artifical type). It sounds delicious and easy to make as well as serving a crowd. A definate potluck dish.

I have been making this for years! It is my 25 yr. old grandsons favorite. Think he would rather have it than a present. I have thought of adding garlic or red peppers but have not done it yet.

It sounds good except for the cream of chicken soup - I am not a fan so I would probably use cream of celery and I would probably double the onion

This looks really good. I would probably use some LF or FF ingredients (sour cream, cheeses and cream soup) to decrease some of the fat and calories so that I might add some smoked pork. Oh yes this would be very nice.
