I make a delicious homemade carrot cake with a soft cream cheese frosting topped with chopped nuts and cinnamon sugar. But perhaps, it can be made even better with a little lemon flavoring! I really like the idea of the sweetness of the carrots with the tartness of the lemons. I have also never heard of a ricotta frosting before so I think I would like to try it!

YUM. Carrot cake is the best already, and this lemon ricotta frosting will just put it over the top. Must try for Easter!
