Coconut Banana Balls Recipe

Ingredients
- 1 banana
- 2 cups unsweetened shredded coconut
- 1 Tablespoon raw honey
- 2 Tablespoons coconut oil, melted
- 1 teaspoon vanilla extract (omit or use alcohol-free version for AIP)
- Dash of salt
- Unsweetened cacao powder (use carob powder for AIP) to sprinkle on top (optional)

Preheat oven to 250F (120C) if serving warm.

Mix all the ingredients together in a bowl.

Form small balls (1-inch diameter) from the dough using your hands.

Refrigerate or bake at 250F for 15 min.

I know this recipe calls for banana but my daughter absolutely cannot have them. Is there anything else I can use in these balls to make them work and tasty too? I love the coconut, but I am not sure if a peach or orange might work. Pineapple is on her ok list too.
