"Financier cakes, French almond cookies made with brown butter are deliciously moist, light and tender, quite similar to madeleines and really easy to make. Financiers, known also as almond friands, are called this perhaps due to their shape; baked in the genuine tins, they look like little gold bullion bars. Another, more pragmatic explanation is that they were the favored snack of the suited bankers downtown and had to be small and neat, in order not to mess up those suits."
