These No Bake Lemon Cheesecake Bars are the perfect dessert for days when turning on the oven is just not an option. These delicious lemon bars, which are made with lemon cookies and tart lemon juice, are easy to make and do not take a lot of time to prepare. How does cheesecake get better? Make it a no bake recipe, and then you don't have to heat up the house. I love this idea to put lemon in this version. I think that lemon is rarely used with cheesecakes, but the flavors go so well together. This is going on my menu for the weekend. Thanks!
