One-Bowl Christmas Muffins
"Here’s a super easy-to-make recipe for delicious vegan gluten-free muffins. They require one bowl, a few ingredients and about half an hour to prepare, which makes them a perfect last minute Christmas dessert. They are also very cute. I used coconut milk for this recipe, but you can use any milk you like. I also decorated my muffins with some dried fruit, candied fruit and chocolate chips. This recipe makes about 6 muffins. Happy Holidays! Ingredients 1 tablespoon of flaxseed meal 3 tablespoons of water 1 cup of coconut milk Sweetener of your choice Vanilla extract or cinnamon 1 cup of rice flour 1 cup of oat flour 1 teaspoon of baking powder Dried fruit of your choice Candied fruit of your choice – optional Chocolate chips – optional"

When I first read "Christmas muffins" I was expecting tons of sugar, butter, and oil but was pleasantly surprised by the nutrition of this recipe! Plus, these are vegan and gluten-free!!! P.S. mixing flaxseed meal with water can actually be a great egg substitute for vegans.
