"Using one sheet pan, enjoy a delicious and healthy dinner of lemony shrimp scampi, gnocchi and asparagus. It is an easy weeknight meal. With thoughts of shrimp scampi, I used garlic, olive oil and lemon to flavor my delicious sheet pan of goodness. The shrimp, asparagus and gnocchi all marinade in the same bag. In fact I just saved myself another dish to wash by using a large plastic bag to marinade the shrimp scampi. Then you simply toss everything onto the sheet pan. Being sure to spread out the ingredients into a single layer and roast away."

I love Shrimp Scampi and this recipe with Gnocchi and Asparagus is so perfect. Marinating all the ingredients together helps all the flavors blend perfectly. You can't get any easier than spreading it all on a cookie sheet and baking for ten minutes. Bam, an extraordinary dinner is on the table with no fuss, no muss, and the easiest cleanup ever.

My roommate is allergic to shrimp, so I don't get to eat it often. But he's going out of town in May, and this recipe is definitely on my to-make list!

Yum! Gnocchi is one of my all-time favorite foods! It is actually super easy to make your own. Just mix one egg with one cup mashed potato (or sweet potato or feta cheese or goat cheese) and one to two cups of flour! For this shrimp and asparagus recipe, I think the goat cheese gnocchi would be the best option in terms of complementary flavors!
