Sweet Summer Blackberry Hand Pies
"These blackberry hand pies are packed with the sweet, fruity flavors of a homemade blackberry pie but fit perfectly in your hand. Hand pies are great for easy serving and storing, and they're easier to make for people who don't feel comfortable making a full pie (me included)! When you're planning to cook for a party, it's much less stressful to make a batch of hand pies that are cute and taste delicious with a side of vanilla ice cream or a dollop of whipped cream. Simply hand them out at a barbecue or other get together. They're just as a delicious as a full blackberry pie without the extra hassle."

Ingredients
- 1 refrigerated pie crust
- 6 ounces fresh blackberries
- 2 teaspoons sugar
- 1 tablespoon all-purpose flour
- 1/2 teaspoon lemon juice
- pinch of cinnamon
- 1 egg, beaten
- additional sugar for topping
Instructions

Preheat the oven to 350 degrees F, and line a baking sheet with parchment or a silicone mat.

Rinse the berries well, cut them into pieces and place them in a medium bowl. Add in the sugar, lemon juice, cinnamon, and flour, and mix well.

On a lightly floured surface, such as a pastry board, lay out the pie crusts and roll with a rolling pin if needed to smooth it out to ¼ inch thickness.

Using a round large cookie cutter or other object, such as a cup, to cut out circles about 4 inches wide.

Place the pie crusts on the baking sheets, and spoon about 1 tbsp of filling in the center of each.

Fold the dough over, and press the edges firmly with your fingertips. Then use the tongs of a fork to press together.

Brush them with the beaten egg, and sprinkle a bit of sugar on top.

Bake for about 20-22 minutes, until golden brown and flaky. Let cool before serving.

When the blackberries go on sale in the summertime I usually buy so many that I have no clue what to do with them, other than to eat them in yogurt, in cereal, or just plain which are all good choices but I've been trying to find a recipe that'll keep the integrity of the blackberries and enhance their natural subtle flavor at the same time. This recipe is perfect, and I like that it's not so sweet that you can't forget you're eating blackberries.

These look so much like those uncrustable sandwiches that kids love so I'm sure it'll be easy to get the whole family to like these! I would like to try these with all different flavors- strawberry or blueberry, mixed berry, lemon or lime! Endless possibilities for this great summer recipe.

I will have to try this recipe. I love blackberry pie and have never thought of making hand pies with the delicious berries. I haven't cut up blackberries when making full size pies. I suppose it would help keep the hand pies sealed better without large lumps. I'll try it for this recipe.
