Magical All-Day Meatloaf is a meal made with almost no effort at all! All you need is a slow cooker, and a few ingredients, and like magic, your meatloaf should be done and ready to eat by the time you make it home. Ingredients

  • 2 pounds ground beef
  • 1/2 cup green peppers, chopped
  • 1/2 cup onions, chopped
  • 1 1/2 teaspoon salt
  • 2 eggs
  • 1 cup Ritz cracker crumbs
  • 1 1/2 cup ketchup, divided
  • 1 teaspoon yellow mustard
  • 1/4 cup brown sugar

Instructions

  1. In a medium bowl, mix together ground beef, green pepper, onion, eggs, salt, cracker crumbs, and 3/4 cups of the ketchup. Use a spoon or your hands to combine all the ingredients together.

  2. Line your slow cooker with aluminum foil and spray with non-stick spray. Shape the meat mixture into a loaf and place in slow cooker.

  3. Cook on LOW for 6-8 hours or HIGH for 3-4, until the meat is no longer pink. In the last 15 minutes of cooking, mix together remaining ketchup and brown sugar and spread on top meatloaf. Let cook for remaining 15 minutes.

  4. Let cool, slice and serve

This is a nice basic meatloaf recipe that really is rather foolproof. It's got lots of green pepper and onion, which I prefer. There's a discrepancy, though, between the video and the written directions. The video calls for the meatloaf to be cooked on High for 6 to 8 hours, while the written instructions call for Low for 6 to 8 hours or High for 3 to 4. I would think that the written instructions are the correct ones for making a meatloaf. If you follow the video instructions, you'll have a brick.

It never dawned on me to make meatloaf in a crock pot...what a great idea! Is this a burger version and did you have any issues with an overage of hamburger grease? I've never seen meatloaf made with both ketchup and mustard before. Personally, I've always preferred to use tomato sauce instead of the norm...and I remember my grandmother used grape jelly. So many different versions to try, all no doubt just as good as the other.
