I actually have a little iron-cast pan that makes bite-sized pancake muffins but this is a great recipe that uses a regular cupcake tray. Also, if you don't have the time or the ingredients, you can always look up substitutions to use regular pancake mix- I've done that before and it comes out very well! Perfect recipe to get the kids involved.
