Mandarin Shrimp & Noodles
Ingredients
- 8 oz.s medium noodles or fettucine
- 2 Tbsp vegetable oil
- 1 small red bell pepper, cut into small cubes
- 12 oz.s medium cooked shrimp
- 3 green onions, cut into 1 inch pieces
- 1 (11-oz.) can mandarin oranges in light syrup
- 1 Tbsp brown sugar
- 2 Tbsp soy sauce
- 2 Tbsp white wine vinegar
- 1 garlic clove, crushed
- 1 tablespoon cornstarch
- 1 tablespoon toasted sesame seeds
Instructions
Cook pasta according to package directions; drain. Rinse with hot water; drain and set aside in large warm serving bowl. While pasta cooks, heat oil in a large skillet or wok. Add bell pepper and green onions. Cook and stir 1-2 minutes. Drain oranges, reserving syrup. In a small bowl, combine orange syrup, brown sugar, soy sauce, vinegar, garlic and cornstarch. Stir into skillet. Add cooked shrimp. Cook and stir until slightly thickened. Add drained mandarin oranges. Heat through, then spoon over drained cooked pasta. Sprinkle with toasted sesame seeds. Makes 5 or 6 servings.
