"This One-Pot Creamy Vegetable Pasta is what healthy and delicious food is all about. We’re talking a ton of great flavors, simple heart-healthy ingredients, and all done in about 30 minutes. Serve it next to a crunchy baguette and a bottle of Spanish wine for a fabulous meal. To make this recipe, I used a combination of onions, garlic, red bell peppers, and zucchini. You can mix it up and use whatever vegetables you like or whatever you have on hand. As for the pasta, I used penne, but any type of thick-cut pasta will work, such as rigatoni, ziti, or even macaroni."
