Sweet Potato Mac and Cheese
Basic mac and cheese recipes can't hold a candle to this recipe for Sweet Potato Mac and Cheese. Smooth and creamy, this sweet potato casserole serves as a marvelous dinner during the fall. This dish allows you to sneak veggies into your kids' meal without them noticing. It's slightly sweeter than normal mac and cheese, but your kids probably won't notice. You can serve this sweet potato recipe as either a side dish or a main dish. Also, for a simple weeknight dinner, prepare it during the weekend and reheat it throughout the week.
Notes
To easily cook your potatoes, place directly on the oven rack with a sheet underneath for catching drips. Start with a cold oven and preheat to 450 degrees F. Cook for 45 minutes or until soft.

Sweet potato sounds like an amazing addition to mac and cheese. Butternut squash sounds really great too. I like it's flavor and creamy texture even though it's probably the most difficult vegetable for me to peel and cut up. Before now, l only made mac and cheese from the box and the only addition I knew of was canned tuna! This recipe is definitely an eye-opener.

This recipe looked very interesting. I was intrigued to know how macaroni was made with sweet potato, thinking it may be like some kind of gnocchi but I see that the 'secret is in the sauce!' I agree it is an excellent way to incorporate vegetables without your kids noticing. I like those kinds of recipes. I also thought that you use butternut instead of the sweet potato. I am sure that would work.

Yum! My roommates and I love sweet potatoes so this would be a perfect meal for us to make together! Also, this recipe cuts back on a lot of the added fat, sodium, and calories that cups and cups of cheese would add.

Mac and cheese is always a hit with our family and we all love sweet potatoes too so this dish was a sure winner! I didnt use the flour, I added a little cream to the mashed sweet potato as it was quite dense and sprinkled a little grated parmesan on the top before baking. These were small changes, though - the recipe is really tasty and i will definitely be making it again and again.
