Ingredients

  • 4 ounces bacon
  • 1 ounce onions
  • 3 cups okra
  • 15 ounces can diced tomatoes
  • Salt and pepper to taste
  • 13 ounces pork chops
  • 2 bay leaves
  • 2 cups beef stock

Instructions

  1. Render the fat of the chopped bacon in a heavy-bottomed sauté pan until crisp. Set Aside.

  2. Using the same pan and the fat from the bacon, sauté minced onions until translucent.

  3. Add the pork chops sauté until lightly colored.

  4. Add the canned diced tomatoes and bring them to a simmer for 2 minutes.

  5. Add the beef stock and bay leaves.

  6. Bring to a boil and reduce it to a simmer.

  7. Simmer for 15 minutes

  8. Add the chopped Okra and continue simmering for 5 minutes.

  9. Season with salt and pepper.

  10. Top with crispy bacon before serving.
