    Ingredients

    • 1 24oz. pork filet
    • 3 tablespoons olive oil
    • 1/2 cup diced red onions
    • 1/2 cup diced celery
    • 1/2 cup red wine
    • 4 cloves finely chopped garlic
    • 3 sprigs of fresh thyme
    • 1 teaspoon honey
    • 1/2 cup sweet chili sauce
    • 1 cup cherry tomatoes sliced in half
    • salt and pepper to taste

    Steps

    1. Preheat oven to 350°F.

    2. In a large skillet over med-high heat, add olive oil.

    3. Sprinkle salt and pepper all over pork loin filet

    4. Pan sear pork loin filet, turning on all sides as it browns.

    5. Remove pork loin from skillet and put into a roasting pan.

    6. Add wine to skillet while scraping the bottom to remove brown bits and bring to boil.

    7. Add onions, celery, thyme, garlic, and honey to the pan, let simmer until soft.

    8. Add tomatoes and sweet chili sauce and cook until warmed through.

    9. Pour over pork loin and cover with foil.

    10. Roast in oven for 20-25 minutes, until internal temperature reaches 145°F.

    11. Allow to rest for 10 minutes, slice and arrange on platter with pan drippings.
