Mexican Rice Recipe (Arroz Rojo)
"This Mexican Rice Recipe has a fun twist; I add Knorr Caldo de Tomate Con Sabor De Pollo to the water instead of boiling the rice with plain water. The rice is more flavorful and has a creamier texture than using water alone. One of the other changes I made was to use olive oil instead of vegetable oil. If you don’t like peas, you don’t need to use them. Eat this rice with enchiladas or ground beef tacos."

This looks delicious! I absolutely love Mexican rice. Sometimes, I'll just go to a Mexican restaurant and get a plate of rice and a drink. I'll have to make this recipe when I get the chance.
