Ingredients
- 2 pounds white potatoes
- 1 tablespoon fresh rosemary
- 1 teaspoon salt
- 2 to 3 cloves garlic, chopped
- 1 teaspoon olive oil
- olive oil cooking spray
Instructions
- Preheat oven to 400 degrees F. Wash and scrub potatoes. Cut in potatoes in half. Spray a baking dish with the cooking spray.
- Drizzle the potatoes with olive oil and coat. Sprinkle potatoes with garlic, rosemary, and salt and stir to mix well.
- Bake uncovered for 20 to 35 minutes, stirring occasionally.

Potatoes are a staple in my house. We find every way to make them that we can. This is one idea that I think my kids will love because they are pretty much burnt out on all my regular potato sides. Thanks for the idea, it seems so quick and easy to make.

I love the idea of using small red potatoes in this dish. The garlic and rosemary is a great combination, and the only addition I might make is to sprinkle some crumbled bacon on top. When we're grilling this summer, I might try doing these in a foil package to see how they turn out. These would be ideal with steaks.
