Healthy Lemony Garlic Veggie Medley
"Now that the holidays are officially over (as always, came too quickly and left too soon!) its time to start eating healthier and leaner! We all know how healthy broccoli is; I believe I have mentioned that phenomenal vegetable many times. However, did you know that cauliflower is also considered to be one of the healthiest foods? Low in calories, cauliflower is also a good source of vitamin C, vitamin K, vitamin B6, choline, and fiber. Cauliflower, like broccoli and cabbage, is a cruciferous vegetable. These types of vegetables are an excellent source of natural antioxidants. We all know how much I love to cook with garlic. In the words of Hippocrates, “Let food be thy medicine and medicine be thy food”. Hippocrates actually used garlic to treat a variety of medical conditions. Many of these benefits have been proven: garlic supplements are known to boost the immune system as well as reduce the severity of colds and flu. Garlic can also reduce high blood pressure and help to prevent cardiovascular problems like strokes and heart attacks. Garlic can also lower cholesterol and may have some benefits for improving bone health. Here is an extremely healthy veggie side dish that is easy to prepare and is absolutely delicious. All you need is a head of cauliflower, a head of broccoli, a head of garlic, a touch of butter, lemon juice and a dash of rosemary! Try this for a super healthy, super yummy side!"
