Mediterranean Chicken Meatballs

Ingredients
- 1 pound ground chicken, 7% fat
- 1/4 bunch fresh tarragon
- 1/4 bunch fresh dill
- 1 ounce Dijon Mustard
- 1 fresh shallot, minced
- 2 cloves fresh garlic, minced
- 6 Musco Family Kalamata Olives, pitted and minced
- 1/2 ounce panko bread crumbs
- sea salt, to taste
- black pepper, to taste
- 8 red grape tomatoes, cut in 1/2 lengthwise
- 4 ounces plain yogurt
- 1 lemon, zested and juiced
- 1 ounce cucumber, seeded and grated
- 1/8 bunch fresh mint, minced
- 1/4 ounce Crisco Olive Oil
- 16 bamboo skewers

Mix ground chicken with tarragon, dill, shallots, garlic, mustard, panko bread crumbs and seasonings.

Cook a small sample to check flavor. Adjust if necessary.

Form mix into 1 ounce meatballs.

Chill for 1 hour.

Mix yogurt with lemon juice and zest, cucumber, mint and seasonings.

Cooking Instructions

Cook meatballs in 400 degree oven for 10 to 12 minutes until they register 165 degrees or higher on digital thermometer. Allow to rest for a few minutes.

Skewer a halved tomato and then a meatball. Serve on a puddle of Tzatzki sauce.
