Easy Cheeseburger Soup

Notes*I often cook the beef in advance and keep it in the refrigerator for a couple of days (or in the freezer for up to 3 months) until I’m ready to make the soup. It cuts out an extra step and makes the prep time even faster!
**Tip: When I only need a small amount of diced celery or onion, I like to buy it chopped from the salad bar at the grocery store. That way I only have to buy the small amount that I need and there's no extra that goes to waste. Plus, in small quantities it’s still relatively inexpensive.
***I prefer the Velveeta in this recipe because it melts easily and has a smoother, creamier consistency in the soup.

This soup is delicious. It sort of reminds me of loaded baked potato soup, but then you get the burger taste, and it's on a different level. I used velveeta as sugessted in the recipe. This really is a creamy, delicious soup. This is perfect for the long, cold, winter days ahead. I am putting this in my monthly rotation of meals for this winter!
